Nutty Sweet Potato Soup

This is a most delicious soup that I came across in Vegetarian Times Magazine. I altered the original a bit and this is what I came up with. It was perfectly thick and smooth and yummy (and healthy!). Andrew loved it too.

2 tbsp. olive oil
1 large sweet onion, diced
3 tbs. tomato paste
3 tbsp. creamy peanut butter
1 shake cayenne pepper
a few shakes of cinnamon
2 cloves garlic, minced
3/4 tsp. cumin
2 medium sweet potatoes, peeled and sliced to 1/4 inch thick
3 1/2 cups vegetable broth
1 1/2 cups water
2 cups packed spinach leaves, thinly sliced

Heat oil in Dutch oven or large soup pot over medium high heat. Add onion and saute for 5 to 7 minutes. Stir in tomato paste, peanut butter, cayenne, garlic, cumin, cinnamon and cook for 1 minute, stirring constantly.
Add sweet potatoes, broth and water and simmer over medium-low heat, partially covered, 20 to 25 minutes or until potatoes are tender.
Blend mixture with an immersion blender or in food processor until rich and creamy. Bring soup back to simmer and stir in the spinach leaves.

Giving Thanks & Cranberry Sauce

Is there any smell better than onions frying up in a pan of butter? Mmmmm....that is just one of the scents taking over our house right now.

It's 10:30 am & I have already made cranberry sauce, apple sauce, pumpkin bread, cranberry bread, sweet potato casserole, pumpkin pie and have prepped the green beans and brussels for tomorrow. I still have the pecan pie to make before I call it a day in the kitchen.

It feels good to be organized and prepared ahead of time. I just want to enjoy myself tomorrow with my family. It will be my first Thanksgiving as a hostess and I'm looking forward to it. Luckily, Andrew has off today so I have an extra set of hands to help with preparations or with the boys.

Also, Andrew's mom is making the turkey and gravy at home and bringing it already sliced! She's saving me a lot of stress & making more room in the oven!!

Here is a recipe for super easy cranberry sauce. It resembles my mom's recipe (formerly my Grandmom Annie's recipe), especially if you run it through a ricer after it's cooked. You can also use a food processor but it doesn't come out quite as silky smooth. If you like chunkier cranberry sauce, just mash slightly with the back of a spoon and serve.




Start with 2 bags of fresh cranberries. Place in large saucepan.

Add 2 cups of white sugar, a few shakes of cinnamon and 2 cups of orange juice.


Over medium heat, stir all together and cook for about 15-20 minutes. Listen for the cranberries popping!

Remove from heat & process through a ricer (this was my Grandmother's - you can see how worn it is!).


Transfer to serving bowl and let cool then refrigerate and serve.

Our Crazy Apple Picking Adventure

Saturday morning, my friend Lauren and I decided to take all of our children apple picking since their daddies were out at a beer tasting festival for the afternoon.

We decided to follow each other over to Battleview Orchards in Freehold.

About 10 minutes from reaching our destination, Lauren's car broke down and she had to quickly pull over. She called AAA while we loaded her 3 kids and their seats & belongings into my car. Lily, Nora and Lucy were a bit shaken up & confused in the beginning but once I pulled out the Halloween pop-ems & fruit snacks, all was good.

We were able to leave the van & continue on to the orchard. Only to find that minutes later, we were stuck in orchard traffic. Why did we think that we were the only ones with the fabulous idea of picking on a beautiful fall day? Everyone and their mother was there.


First we took a hayride which was the most relaxing part of the day.

All of the kids loved it. Nora almost fell asleep.



We finally got our buckets for picking and started on the hunt for full apple trees.

Problem was...there were not very many full trees. The red delicious were completely picked which I didn't mind...they are not my fave. I really wanted golden delicious. There was NO fruit at the bottom branches. So, I climbed a tree. I had the kids come underneath me and I dropped the apples down to them.
We filled almost two buckets this way.

Finally, we found some trees with small green and red apples on low branches.


The kids had fun picking on their own.


We still don't know what kind of apples they are! We think Braeburn. They are probably not even ripe, looking at their puny size. But that's okay. As long as the kids had fun!

The lines were crazy at check-out. Lauren and I kept shooting each other looks and laughing at just how long everything was taking, and wondering if us moms were having any fun at all. We were trying not to complain.

Ben, Dan and I picked 21 lbs. of apples. Not too bad!

We got back to the car, had a picnic lunch in the car and had to break the news that there would be no candy or caramel apples or cider donuts for dessert. The farm store was way too packed to even attempt to go inside.

We opted for Hoffman's ice cream instead once we got back into Point Pleasant.

Our lesson learned was to apple pick mid-week!

On an awesome note, I made the BEST applesauce I've ever had. It's the easiest recipe ever and it's for the crockpot!

16 apples, peeled, cored and quartered
1/4 cup water
1/2 cup sugar
some cinnamon to your liking

Place apples in crockpot with water and cook on high for 4 hours. Once soft, let cool a little bit and while still warm, add sugar and cinnamon. Puree in food processor in batches until super smooth. There is not a chunk to be found and that's how I like it. If you like it chunky, you can mash by hand with a potato masher.

An Easy Fall Treat


First, you need Hershey's hugs. The white and milk chocolate together look cute for fall.


You also need snap pretzels...Snyder's makes them. They look like a basket-weave square.
Place them on a cookie sheet. Oh, and your oven should be preheating right now - 300 degrees.

Have your kids open all of the hugs.

They are allowed to have one or two!

Place one hug on top of each pretzel.

Once all the hugs are in place, put cookie sheets in oven for a mere 3-5 minutes. Keep your eye on them! The hugs should be just starting to melt, not fully melted.

Next, open some bags of candy corn.


Place one candy corn on top of each melty hug. Be careful here...everything's pretty hot! Press the candy corn down just a smidge.

Give your dog a candy corn.

All finished! Aren't they cute? Allow to cool & harden back up completely before storing.


But you can eat while still melty. That's the best!
